BBQ Cheesy Spinach Mushrooms Recipe

BBQ Recipe Ideas: Blue Cheese, Spinach and Mushroom Starter

This recipe comes from one of our top 5 Arctic Cabin owners cookbook competition winners, Allan & Helen. We even had a go at making them at our Nottingham show site and they were well recieved!

These delicious cheesy spinach mushrooms make a great starter or main alongside some vegetables roasted over the grill while you chill our in your BBQ cabin.

The Recipe

All elements of this dish can be made in your BBQ hut or garden bar and is super quick and easy to make. You don't need be a barbecue master to get started, BBQs are more then just burgers and hot dogs!

This recipe uses blue cheese to top the mushrooms, but if blue cheese isn't your preference it can easily be swapped for a delicious cheddar, feta or whatever you prefer.

Ingredients:

  • 4 large field mushrooms
  • 450g pack spinach
  • 3 garlic cloves
  • 1 tbsp lemon juice
  • 100g blue cheese (or any cheese of your choosing, Allan and Helen recommend Roquefort!)
  • 1 pack of cherry tomatoes
  • 1 tbsp olive oil

Method:

  1. Heat up your BBQ grill so it’s ready for cooking.

  2. Gently cook the garlic and spinach with a little olive oil in a pan on the grill. Then add the salt, pepper and lemon juice.

  3. Once the spinach has wilted, put it into a sieve and press out the excess water.

  4. Slice the cherry tomatoes so they are a size that will comfortably sit inside your mushrooms. This could be thinly sliced or chopped- it’s up to your preference.

  5. Slice your cheese into a similar size that will also fit into the mushrooms or grate it on top of the mushrooms.

  6. Remove the centre stalks from the mushrooms and brush them with a little olive oil, then place them on the grill, gill side down, and flip them over once cooked.

  7. When you have flipped the mushrooms over, spoon the garlic and spinach mixture into the mushrooms along with the chopped tomatoes and cover with the cheese.

  8. Grill your mushrooms until the cheese has melted, around 5 minutes, then serve and enjoy!
