BBQ Cabin Recipe Ideas: Chinese Style Lamb Skewers

The Recipe
These lamb skewers work perfectly as a main, served with salad, vegetables and bread, or as a tasty side to complement another dish.
To create a vegetarian or vegan-friendly version, the meat can easily be substituted for tofu, seitan, or any of your favourite plant-based alternatives.
Ingredients:
- 2 lbs lamb leg or shoulder, cut into small pieces (or plant-based alternative)
- The size of cut lamb pieces depends on your preference, but Deva recommends cutting it into cubes around 2cm.
- Metal or bamboo skewers
- Optional: Sliced vegetables (peppers, onions, mushrooms etc)
For the marinade:
- ½ onion
- 2 tbsp Chinese cooking wine
- 1 tbsp soy Sauce
- 1 tsp dark soy sauce
- 1 tsp ground ginger
- 1 tbsp ground cumin
- ½ tsp sugar
- 2 tbsp Chinese BBQ spice blend (recipe below)
- 1 tbsp olive oil or vegetable oil
- A shallow bowl, tray or plastic zip-lock bag
For the Chinese BBQ Spice Blend:
- 1 tbsp ground cumin
- 1 tsp five spice
- 1 tsp salt
- 1 tsp sugar
- 1 tsp ground cayenne pepper
- 1 tbsp sesame seeds
- ½ tbsp ground peanuts
Method:
- Mix all the Chinese BBQ spice blend ingredients together, we will be using 2 tbsp for this recipe, so keep any leftovers in an airtight container for future cooking.
- Mix the marinade ingredients together in a shallow bowl, tray or plastic zip-lock bag and add the cut lamb pieces (or plant-based alternative). Let this marinade for at least an hour if you’re short on time, but let it marinade in the fridge overnight if you want a strong flavour! (An optional step here is to marinade your vegetables too)
- Light the fire and heat up the grill in your BBQ cabin. If you are using bamboo skewers, make sure you soak them in water before use, so now is the perfect time to get those ready!
- Skewer your marinated lamb or meat-alternative pieces onto the metal or soaked bamboo skewers. For a colourful touch, alternate between meat and vegetables. If you are using metal skewers, make sure to use oven gloves or BBQ gloves to avoid any burns on your hands.
- Pop your skewers on the barbeque grill, making sure to turn them over occasionally to ensure they are cooked until tender. How long this takes will depend on how big or small your lamb pieces are. Serve and enjoy!
